Paleo Gluten Free Chocolate Bars

You're probably thinking that a chocolate bar that's Paleo and gluten-free isn't going to taste that good. I'm also guessing that if I added that these bars are considerably healthy too that it would make you doubt it even more! Well I was a little skeptical too when I first found this recipe, but I had all the ingredients so I thought, "what's there to lose?"


After taking the time, which really wasn't that long, to make the bars and take the pictures, I knew that they obviously looked good. I was very happy with how the pictures turned out since that is something new I have tried to take on, so with that I had to give the bars a try and to my surprise they were amazing!

In the past with the dairy free chocolate bars I'd buy from the store I'd still find my stomach ending upset and just gave up on dairy free chocolate in general. After having these bars my stomach didn't get upset at all and I knew this was the solution to my problem...Finally! This is a recipe I originally found on Paleoplan.com and is a treat you can eat without feeling guilty about it. This recipe is Paleo, dairy free, gluten-free, and sugar free too, so it's perfect for almost any allergy. Enjoy!

Ingredients:
  • 3 Tbs coconut oil
  • 1/4 cup cocoa powder
  • 1/2 cup ground almonds
  • 3/4 cup shredded coconut
  • 1 Tbs raw honey
  • Parchment paper
Directions:
  1. Melt the honey and coconut oil in a saucepan over low heat. Take off heat as soon as coconut oil is totally melted.
  2. Once combined and off heat, add the cocoa, ground nuts, coconut and mix together in the sauce pan.
  3. Pour mixture onto a small baking sheet covered in parchment paper.  Form into any shape and size of your choice when cool enough to touch.
  4. Freeze until hardened. Enjoy!

Any thoughts on what one would replace the ground almonds with? Would chia or flax work or would they ruin the texture of the bar?

Any other nut would work for sure but if you have large enough flax seeds that might work as well. The coconut shreds hold a lot together so I would just give it a try!
