Gluten Free Peanut Butter Bars {Vegan & Peanut Free Options}

One thing you probably don't know about me is that I'm from Columbus, Ohio. If you know anything about the city of Columbus then you will know that they are huge Ohio State fans! Every college football Saturday is basically like a Holiday for us because everyone in the city gathers around to watch the game. Buckeyes are a huge favorite of mine and many people from Ohio, especially on game day. That's why this recipe is one of my favorites since it is basically buckeyes turned into bars! This recipe can be made gluten-free, dairy free, and peanut free with the right ingredients listed. It's not the healthiest recipe but it's definitely one of my favorites for dessert!


Ingredients:
Directions:
  1. Melt butter or margarine over low heat.
  2. Add sugars, peanut butter and vanilla to the butter. Mix well.
  3. Press into a 9 x 13 inch pan.
  4. Melt chocolate chips in microwave safe dish and spread over the top of peanut butter mixture. Let cool in fridge. Serve!

Hello Taylor! I am going to try this tonight, except I'm going to use sunbutter (because my son is allergic to all nuts, so no peanutbutter). I will be using Earth's balance and dairy free chocolate chips too because of his milk allergy. I enjoyed checking out your blog, great job!

Found Jenny's post about your recipe on our Peanut Allergy site... I can't wait to try this recipe!! Like Jenny I will be substituting Sunbutter, but will keep the rest of the recipe as you have written it. We will also share these with my 8 yr olds school nurse.. she has celiacs and is always looking for something special she can eat. :o) Thank you for posting! Joy

Welcome to you both! I would imagine sunbittern would work just as well and I'm glad you guys are able to make it! Let me know how it turns out with the sunbittern since I'm interested to know if it will still taste good!

Oh my goodness, making this recipe with sunbutter is the CLOSEST thing i've made that tastes like a reese's peanut butter cup!!! When my son was diagnosed with his food allergies 4+ years ago, I gave up nuts...and reese's type food was my favorite dessert of all time. I have given other people samples of this and they can tell it's made with sunbutter, but to me (someone who hasn't had PB in years) it tastes like the real thing. I added a bit more confectioners sugar to it because sunbutter can get pretty runny/oily. Excellent though. I posted it on one of my facebook peanut allergy pages and told people to try it using sunbutter! Thanks!

Awesome to hear it tasted good! I'm glad you liked it so much and it was an easy recipe you could do even for your son's peanut allergy! I will add sunbutter as an optional ingredient for this recipe since many people with peanut allergies may like it as well! I finally just got a chance to make these. WOW! The recipe was so easy, and like Jenny I used sunbutter. I did increase the confection sugar by 1/4 cup, But other than that followed to a T. They are fantastic, Thank you so much for sharing :) Joy PS its a keeper I will be making again.
