Gluten Free Banana Oatmeal Muffins

Mmmm...muffins. A lot of the best things for breakfast are usually not naturally gluten-free. Sadly this is something we all have to face not being able to have muffins, pancakes, and other normal breakfast items. So trying to come up with a healthy gluten-free muffin is something I had to come up with. This recipe is very simple to make and dairy free as well. These can also be frozen lasting for weeks in the freezer then be defrosted for later. It makes mornings a lot quicker and still tastes just as great. Hope you like them!

Ingredients:
  • 1 1/4 cup gluten free all purpose flour
  • 2 very ripe bananas (mashed)
  • 1/4 cup light brown sugar (packed)
  • 1/3 cup cinnamon applesauce
  • 1 egg
  • 1 tsp. GF vanilla
  • 1 tbs. Cinnamon
  • 1 tbs. Agave nectar (optional)
  • 1 cup gluten free oats
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Baking powder
  • 1/4 tsp. Nutmeg
Directions:
  1. Preheat oven to 350. Grease muffin pan or use muffin liners.
  2. In medium mixing bowl combine mashed bananas, egg, sugar, applesauce, vanilla, agave nectar and mix well.
  3. Add in oats, flour, baking soda, baking powder, cinnamon & nutmeg. Mix well.
  4. Fill 12 muffin cups with batter. Bake 18 to 20 minutes. Enjoy!
