Gluten Free Pumpkin Oatmeal Cookies

I've always been an oatmeal raisin cookie type of guy rather than cookies with all the chocolate. With a combination of pumpkin and oatmeal cookies, this was the perfect recipe for me. The directions are simple enough that practically anyone can do it! They are gluten and can easily be made dairy free with the special butter. This is by far one of my favorite cookie recipes and is perfect for around Halloween too. Hope you like them!

Ingredients:
  • 1 Cup gluten free all-purpose flour
  • 1 Tsp. ground cinnamon
  • 1/2 Tsp. salt
  • 1/2 Tsp. ground nutmeg
  • 1/4 Tsp. baking soda
  • 1 1/2 Cups brown sugar
  • 1/2 Cup butter (Earth's Choice Natural Butter is Dairy free)
  • 1/4 Cup applesauce
  • 1 egg
  • 1 Tsp. vanilla
  • 1/2 Cup canned pumpkin
  • 2 1/2 gluten free cups oats
  • 1 cup dried cranberries
Directions: 
  1. Preheat oven to 350 F. Line cookies with parchment paper.
  2. Mix all ingredients into a large bowl except for oats and cranberries. Mix well until fluffy or well blended.
  3. Add oats and cranberries if desired. Mix well.
  4. Scoop 2 inch amounts of the dough and place on a greased pan.
  5. Bake for 12 minutes or until golden brown. Cool for 1 minute on cookie sheets. Enjoy!

  1. These look scrumptious! I love anything oatmeal and pumpkin so this will be a must try! I think i will add raisins instead of cranberries :)
