Cheap And Easy Gluten Free Potato Pancakes



This is a great, easy, breakfast recipe that is cheap and long lasting. It costs around five dollars to make 10-15 patties. They can also be frozen for weeks and then defrosted later on to make a quick gluten-free breakfast option. Enjoy!

Ingredient:
  • 1 cup of gluten free Bisquick
  • 1/2 cup water
  • 3 eggs
  • 1/4 cup diced red pepper
  • 1/4 cup diced green pepper
  • 1/4 cup of diced onion
  • 1/4 cup of diced mushroom
  • 1 pkg of southwestern style simply potatoes
Directions:
  1. In med mixing bowl, mix together GF Bisquick, water, and eggs.
  2. Add in diced veggies and potatoes
  3. Mix well
  4. Drop 1/4 mounds on med high skillet. Press tops to flatten.
  5. Flip once golden brown and remove from heat once cooked thoroughly
  6. Serve with ketchup or sour cream.
