Ingredient:
- 1 cup of gluten free Bisquick
- 1/2 cup water
- 3 eggs
- 1/4 cup diced red pepper
- 1/4 cup diced green pepper
- 1/4 cup of diced onion
- 1/4 cup of diced mushroom
- 1 pkg of southwestern style simply potatoes
- In med mixing bowl, mix together GF Bisquick, water, and eggs.
- Add in diced veggies and potatoes
- Mix well
- Drop 1/4 mounds on med high skillet. Press tops to flatten.
- Flip once golden brown and remove from heat once cooked thoroughly
- Serve with ketchup or sour cream.
