  • 1/4 cup diced red pepper
  • 1/4 cup diced green pepper
  • 1/4 cup of diced onion
  • 1/4 cup of diced mushroom
  • 1 pkg of southwestern style simply potatoes
Directions:
  1. In med mixing bowl, mix together GF Bisquick, water, and eggs.
  2. Add in diced veggies and potatoes
  3. Mix well
  4. Drop 1/4 mounds on med high skillet. Press tops to flatten.
  5. Flip once golden brown and remove from heat once cooked thoroughly
  6. Serve with ketchup or sour cream.

Thanks! FYI I put the left overs in my fridge last night then defrosted for this morning and they still tasted just as good!
