Ingredients:
- 1 Cup gluten free all-purpose flour
- 1 Tsp. ground cinnamon
- 1/2 Tsp. salt
- 1/2 Tsp. ground nutmeg
- 1/4 Tsp. baking soda
- 1 1/2 Cups brown sugar
- 1/2 Cup butter (Earth's Choice Natural Butter is Dairy free)
- 1/4 Cup applesauce
- 1 egg
- 1 Tsp. vanilla
- 1/2 Cup canned pumpkin
- 2 1/2 gluten free cups oats
- 1 cup dried cranberries
- Preheat oven to 350 F. Line cookies with parchment paper.
- Mix all ingredients into a large bowl except for oats and cranberries. Mix well until fluffy or well blended.
- Add oats and cranberries if desired. Mix well.
- Scoop 2 inch amounts of the dough and place on a greased pan.
- Bake for 12 minutes or until golden brown. Cool for 1 minute on cookie sheets. Enjoy!
These look scrumptious! I love anything oatmeal and pumpkin so this will be a must try! I think i will add raisins instead of cranberries :)
